Ingredients

  • 1 medium head of cabbage, chopped
  • 2 cans of white beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, sliced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat a large pot over medium heat.
  2. Add the diced onion and garlic, sauté until soft.
  3. Add the sliced carrots and chopped cabbage, cook for a few minutes.
  4. Add the white beans, vegetable broth, thyme, salt, and pepper.
