Ingredients
- 1 medium head of cabbage, chopped
- 2 cans of white beans, drained and rinsed
- 1 onion, diced
- 3 cloves of garlic, minced
- 4 cups vegetable broth
- 2 carrots, sliced
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add the diced onion and garlic, sauté until soft.
- Add the sliced carrots and chopped cabbage, cook for a few minutes.
- Add the white beans, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot.
