  • 2 cups sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 cup buttermilk
  • 1 cup chopped pecans, toasted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Cream cheese frosting (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Stir in the vanilla extract and chopped pecans.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. Once cooled, frost with cream cheese frosting and sprinkle with additional toasted pecans, if desired.
