Description

A warm and hearty meal of bell peppers stuffed with spicy buffalo chicken, cream cheese, and topped with fresh avocado, perfect for wholesome dinners.


Ingredients

  • 4 large bell peppers (any color)
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce (adjust according to your spice preference)
  • 1/2 cup cream cheese (room temperature)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup green onions (chopped, for garnish)
  • 1 avocado, diced (for topping)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the peppers by slicing the tops off and removing the seeds and membranes.
  3. In a mixing bowl, combine shredded chicken, buffalo sauce, and cream cheese; mix well.
  4. Add salt and pepper to taste.
  5. Stuff each pepper with the buffalo chicken mixture.
  6. Place peppers upright in a baking dish.
  7. Top with extra cheese and pour remaining buffalo sauce over the tops.
  8. Cover with foil and bake for 25-30 minutes.
  9. Uncover and bake for another 10-15 minutes until the peppers are tender and cheese is bubbling.
  10. Garnish each pepper with diced avocado and chopped green onions before serving.

Notes

You can prepare the peppers and store them in the fridge for up to 24 hours before baking.
