Description

A hearty and flavorful meal combining tender chicken, fresh veggies, and creamy avocado, all drizzled in spicy Buffalo sauce.


Ingredients

  • 2 Chicken breasts
  • 1/2 cup Buffalo sauce
  • 1 cup Rice
  • Fresh vegetables (bell peppers, carrots, cucumbers)
  • 1 Avocado
  • 1 tablespoon Olive oil
  • Salt
  • Pepper


Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet over medium heat, pour in olive oil.
  3. Season chicken with salt and pepper; place in heated skillet.
  4. Cook the chicken until it reaches an internal temperature of 165°F (75°C).
  5. Remove chicken, let it rest, then shred using two forks.
  6. Toss shredded chicken in Buffalo sauce until fully coated.
  7. Assemble bowls with a scoop of rice, topped with chicken and fresh veggies.
  8. Top with sliced avocado and drizzle additional Buffalo sauce if desired.

Notes
