Ingredients

  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 cup peas (frozen)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Heat a generous splash of olive oil in a large skillet over medium heat.
  2. Add in your chopped onion and minced garlic; sauté until softened.
  3. Toss in your bell pepper and zucchini; cook for about 5 minutes.
  4. Stir in the brown rice, smoked paprika, and saffron.
  5. Pour in the vegetable broth, bringing it all to a boil.
  6. Reduce the heat, cover, and let it simmer for 40-45 minutes.
  7. After the time’s up, add the peas and season with salt and pepper; cook for 5 more minutes.
  8. Remove from heat and let it sit for 5 minutes before serving.

Notes

Make sure to soak the brown rice beforehand for better cooking results. Feel free to customize with any veggies you have on hand.
