A moist cake with the rich, nutty flavor of brown butter, layered with sweet caramel sauce and cream cheese frosting, perfect for celebrations.
Ingredients
- 2 cups (448 g) unsalted butter
- 2 1/4 cups (282 g) all-purpose flour, spooned and leveled
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 cup (200 g) granulated white sugar
- 1/2 cup (110 g) brown sugar
- 3 eggs, at room temperature
- 1 tbsp vanilla
- 1 cup (240 ml) buttermilk, at room temperature
- For the caramel sauce:
- 9 tbsp (126 g) unsalted butter
- 3/4 cup (165 g) brown sugar
- 1 cup (240 ml) heavy cream
- 1 1/2 tsp vanilla
- 1/4 tsp salt
- For the frosting:
- 8 oz (226 g) cream cheese, cold
- 2 cups (260 g) powdered sugar
Instructions
- For the Brown Butter: Melt the unsalted butter over medium heat in a saucepan. Cook until golden brown and nutty, then let it cool slightly.
- For the Brown Butter Cake: Preheat the oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
- In a bowl, mix the flour, baking powder, baking soda, and salt.
- In another bowl, beat brown butter with white sugar and brown sugar until creamy. Add eggs one at a time, beating well after each addition, then stir in vanilla.
- Gradually add dry ingredients and buttermilk alternately, mixing until just combined.
- Divide batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool.
- For the Caramel Sauce: Melt butter in a saucepan over medium heat. Add brown sugar and whisk until smooth. Slowly add heavy cream, vanilla, and salt, cooking until thickened. Let cool.
- For the Frosting: Beat cold cream cheese until smooth, then gradually add powdered sugar and mix until creamy and fluffy.
- To Assemble: Place one cake layer on a serving plate, spread caramel on top, add the second layer, and frost sides and top with cream cheese frosting. Drizzle with extra caramel.
Notes
Make sure to let the brown butter cool before mixing to avoid cooking the eggs. Use room-temperature ingredients for a smoother batter.
