Broccoli Tots

Description

Healthy and delicious Broccoli Tots, a fun way to enjoy vegetables. Perfect snack or side dish, easy to make and bake.


Ingredients

  • 2 medium broccoli (550g / 19.5 oz)
  • 2 eggs
  • ¾ cup (60g) almond meal/flour
  • ¾ packed cup (75g) sharp cheddar cheese
  • 2 garlic cloves (minced)
  • ½ tsp salt (optional)


Instructions

  1. Preheat your oven to 375℉ (190℃) and line a baking sheet with parchment paper.
  2. Cut the florets off the broccoli and break them into medium-sized pieces. Remove the tough outer skin of the stem and cut the stem into pieces about 1-2 cm (½-¾ inch) in size.
  3. Steam (or boil) the broccoli stems for 1 minute. Then, add the florets and steam for another 3-4 minutes, or until they are soft. Drain well.
  4. Chop the cooked broccoli and transfer it to a large mixing bowl.
  5. Add the cheese, eggs, almond meal, and garlic to the bowl. Mix everything well to combine. Mash any larger pieces of broccoli as you mix.
  6. Scoop a heaped tablespoon of the mixture and form it into a tot. Place it on the prepared baking tray. Repeat with the remaining mixture; you should make around 23-25 tots.
  7. Optionally, spray the tots with oil, then bake for 20 minutes, or until they are golden.
  8. Serve with a dip of your choice.

Notes

Make sure to drain the broccoli well after cooking to prevent your mixture from getting too watery. Customize your Broccoli Tots by adding different cheeses or spices.
