Description

A quick and easy broccoli cashew stir-fry that can be prepared in just 20 minutes. It features crunchy vegetables and buttery cashews in a simple sauce.


Ingredients

  • 2 cups broccoli florets
  • 1 cup cashews
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil


Instructions

  1. Heat olive oil in a large skillet over medium heat until hot but not smoking.
  2. Add garlic and ginger, and sauté for 1 minute, stirring constantly.
  3. Add broccoli and red bell pepper, stir-fry for 5 minutes.
  4. Add soy sauce and cashews, cook for another 3 minutes, allowing the sauce to reduce slightly.
  5. Drizzle with sesame oil before serving, toss, and serve immediately.

Notes

Use fresh broccoli for the best texture. Frozen broccoli can be used but should be thawed and patted dry to avoid sogginess.
