Ingredients
- Flour tortillas
- Sausage
- Potatoes
- Cheese
- Eggs
- Cream
- Salt
- Pepper
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the sausage in a pan until browned.
- Boil or bake the potatoes until tender, then dice them.
- In a bowl, whisk together eggs and cream, season with salt and pepper.
- In each flour tortilla, place a portion of sausage, potatoes, and cheese. Roll them up and place them in a greased baking dish.
- Pour the egg mixture over the rolled tortillas.
- Bake in the preheated oven for 25-30 minutes or until the eggs are set.
- Let it cool slightly before serving.
Notes
You can top with salsa, sour cream, or avocado for extra flavor. For vegetarian options, use black beans or sautéed vegetables.
