Description

Ingredients

  • 2 pounds white fish fillets
  • 1 lime, juiced
  • Salt and pepper, to taste
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. Marinate the fish with lime juice, salt, and pepper for 30 minutes.
  2. Heat olive oil in a pot and sauté onion and garlic until translucent.
  3. Add bell pepper and tomatoes, cooking until softened (5-7 minutes).
  4. Pour in coconut milk and bring to a gentle simmer.
