Ingredients
- 2 pounds white fish fillets
- 1 lime, juiced
- Salt and pepper, to taste
- 1/4 cup olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tomatoes, chopped
- 1 cup coconut milk
- 1/4 cup fresh cilantro, chopped
Instructions
- Marinate the fish with lime juice, salt, and pepper for 30 minutes.
- Heat olive oil in a pot and sauté onion and garlic until translucent.
- Add bell pepper and tomatoes, cooking until softened (5-7 minutes).
- Pour in coconut milk and bring to a gentle simmer.
- Carefully add marinated fish and cook for 15 minutes until flaky.
