Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 2 cups fresh blueberries
- 1 tablespoon lemon zest
- 1/4 cup lemon juice
- 1/2 cup granulated sugar for filling
- 2 large eggs
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, butter, sugar, and salt.
- Press the mixture into a greased 8×8 inch baking dish.
- Bake for 15 minutes.
- In another bowl, combine blueberries, lemon zest, lemon juice, sugar, eggs, and cornstarch.
- Pour the filling over the baked crust.
- Bake for an additional 25-30 minutes until set.
- Let cool before cutting into bars.
