Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup green beans, trimmed and cut
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers gently.
  2. Add the diced onion and minced garlic, stirring frequently until the onion is translucent and fragrant, about 3-4 minutes.
  3. Stir in the chopped carrots and celery, cooking for approximately 5 minutes to soften.
  4. Add the chopped zucchini and diced bell pepper, cooking for another 5 minutes.
  5. Pour in the canned diced tomatoes along with their juices and the vegetable broth. Stir to combine.
  6. Add the drained cannellini beans and green beans, then sprinkle in the oregano and basil, along with salt and pepper. Stir to integrate flavors.
  7. Bring to a gentle boil, then reduce the heat to low and simmer for 20-30 minutes.
  8. Serve hot, garnished with fresh parsley.
