Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup green beans, trimmed and cut
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat until it shimmers gently.
- Add the diced onion and minced garlic, stirring frequently until the onion is translucent and fragrant, about 3-4 minutes.
- Stir in the chopped carrots and celery, cooking for approximately 5 minutes to soften.
- Add the chopped zucchini and diced bell pepper, cooking for another 5 minutes.
- Pour in the canned diced tomatoes along with their juices and the vegetable broth. Stir to combine.
- Add the drained cannellini beans and green beans, then sprinkle in the oregano and basil, along with salt and pepper. Stir to integrate flavors.
- Bring to a gentle boil, then reduce the heat to low and simmer for 20-30 minutes.
- Serve hot, garnished with fresh parsley.
