Description
A fresh and satisfying dish combining the classic flavors of a BLT with tender chicken, perfect for lunch or light dinner.
Ingredients
- 4 cups rotisserie chicken (shredded)
- 8 strips bacon (chopped, center cut)
- 1/2 cup plain Greek yogurt
- 1/3 cup mayonnaise
- 1 tablespoon ranch seasoning
- 1/2 tsp freshly cracked pepper
- 1/3 cup green onions (diced)
- 2/3 pint grape tomatoes (halved or quartered)
- 1 avocado (diced)
Instructions
- In a large mixing bowl, combine mayonnaise and Greek yogurt, whisking in the ranch seasoning and pepper.
- Add the shredded chicken, chopped bacon, and diced green onions. Mix well to combine.
- Gently fold in the halved or quartered grape tomatoes.
- Taste and adjust the seasonings as needed. Add diced avocado just before serving and gently toss.
- Store the salad in an airtight container in the fridge for at least 1 hour before serving.
Notes
Can be served on a bed of greens, in a wrap, or as a sandwich. For a refreshing twist, add a squeeze of lemon or lime.
