Description

A fresh and satisfying dish combining the classic flavors of a BLT with tender chicken, perfect for lunch or light dinner.


Ingredients

  • 4 cups rotisserie chicken (shredded)
  • 8 strips bacon (chopped, center cut)
  • 1/2 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 tablespoon ranch seasoning
  • 1/2 tsp freshly cracked pepper
  • 1/3 cup green onions (diced)
  • 2/3 pint grape tomatoes (halved or quartered)
  • 1 avocado (diced)


Instructions

  1. In a large mixing bowl, combine mayonnaise and Greek yogurt, whisking in the ranch seasoning and pepper.
  2. Add the shredded chicken, chopped bacon, and diced green onions. Mix well to combine.
  3. Gently fold in the halved or quartered grape tomatoes.
  4. Taste and adjust the seasonings as needed. Add diced avocado just before serving and gently toss.
  5. Store the salad in an airtight container in the fridge for at least 1 hour before serving.

Notes

Can be served on a bed of greens, in a wrap, or as a sandwich. For a refreshing twist, add a squeeze of lemon or lime.
