A delicious and satisfying salad combining chicken, bacon, and fresh veggies with a creamy dressing, perfect for meal prep.
Ingredients
- 4 cups shredded rotisserie chicken
- 8 pieces of center-cut bacon, chopped
- 1/2 cup plain Greek yogurt
- 1/3 cup mayonnaise
- 1 tablespoon ranch seasoning mix
- 1/2 teaspoon freshly cracked black pepper
- 1/3 cup diced green onions
- 2/3 pint cherry tomatoes, halved or quartered
- 1 diced avocado
Instructions
- Cook the chopped bacon in a skillet over medium heat until crispy. Remove from heat and set aside.
- In a large bowl, combine the shredded rotisserie chicken, Greek yogurt, mayonnaise, ranch seasoning, and black pepper. Stir until well mixed.
- Add the diced green onions, cherry tomatoes, avocado, and cooked bacon to the bowl. Gently fold everything together.
- Taste the salad and adjust seasoning if necessary.
- Once everything is combined, transfer the salad to an airtight container for meal prep or serve immediately.
Notes
Store in an airtight container in the refrigerator for up to 3-4 days. Keep the avocado aside until serving to avoid browning.
