Description

A delicious and satisfying salad combining chicken, bacon, and fresh veggies with a creamy dressing, perfect for meal prep.


Ingredients

  • 4 cups shredded rotisserie chicken
  • 8 pieces of center-cut bacon, chopped
  • 1/2 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 tablespoon ranch seasoning mix
  • 1/2 teaspoon freshly cracked black pepper
  • 1/3 cup diced green onions
  • 2/3 pint cherry tomatoes, halved or quartered
  • 1 diced avocado


Instructions

  1. Cook the chopped bacon in a skillet over medium heat until crispy. Remove from heat and set aside.
  2. In a large bowl, combine the shredded rotisserie chicken, Greek yogurt, mayonnaise, ranch seasoning, and black pepper. Stir until well mixed.
  3. Add the diced green onions, cherry tomatoes, avocado, and cooked bacon to the bowl. Gently fold everything together.
  4. Taste the salad and adjust seasoning if necessary.
  5. Once everything is combined, transfer the salad to an airtight container for meal prep or serve immediately.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. Keep the avocado aside until serving to avoid browning.
