Ingredients
- 1 cup black beans, cooked or canned, rinsed
- 1 cup rice, white or brown
- 2 cups vegetable broth or water
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish (optional)
Instructions
- In a pot, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Stir in minced garlic, cumin, and paprika; cook for another minute.
- Add the cooked black beans and rice to the pot. Pour in the vegetable broth or water and season with salt and pepper. Stir once to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
- Fluff the rice and beans with a fork and garnish with fresh cilantro before serving.
