  • 1 cup (200 grams) frozen spinach (optional)
  • 2 medium-size potatoes, peeled and cut into chunks
  • 1 Tbsp olive oil, plus more for serving
  • 1 Tbsp tomato paste
  • 1/3 cup (80 ml) white wine
  • 1 sprig rosemary (or 1 Tbsp of chopped fresh leaves/1/2 tsp of dried)
  • 2 cups (500 ml) vegetable broth or hot water
  • 1/2 tsp paprika (optional)
  • 1/2 tsp fine salt, plus more to taste
  • 1/8 tsp black pepper, plus more to taste


Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onions, celery, and carrots; cook until softened.
  3. Stir in garlic and cook for another minute.
  4. Add tomato paste and stir until evenly distributed.
  5. Pour in the white wine, simmer for a couple of minutes until slightly reduced.
  6. Add cannellini beans, potatoes, rosemary, and vegetable broth.
  7. Bring to a gentle simmer, cook until potatoes are tender.
  8. Optional: Use a blender to puree for a creamy texture.
  9. Season with paprika, salt, and black pepper to taste.
  10. Ladle soup into bowls, drizzle with olive oil, and garnish with rosemary leaves or freshly cracked black pepper.
  11. Serve hot.
