Instructions
- Make the Crust: In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add egg and vanilla extract and beat until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Press the dough evenly into a greased 12-inch pizza pan. Bake at 350°F (175°C) for 12–15 minutes, or until the edges are lightly golden. Let the crust cool completely before decorating.
- Make the Frosting: In a medium bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract and mix until creamy and lump-free.
- Assemble: Spread the cream cheese frosting over the cooled cookie crust. Decorate with sliced strawberries, kiwi, blueberries, and mandarin orange segments.
- Optional Finish: For a glossy finish, gently brush the fruit with warmed apricot jam. Sprinkle with fresh lemon zest for a pop of brightness and flavor.
