- Cream Cheese Frosting:
- 8 oz full-fat brick cream cheese (softened)
- 3 tbsp unsalted butter (softened)
- 1¼ cups confectioners’ sugar
- 1 tsp vanilla extract
- Topping:
- 3 cups assorted fresh fruit (e.g., strawberries, kiwi, blueberries, raspberries, grapes, mango)
Instructions
- Make the Crust: Preheat oven to 350°F (177°C). Whisk together flour, cornstarch, baking powder, and salt. In another bowl, cream the butter and sugar until light. Beat in the egg and vanilla. Combine the wet and dry ingredients to form a dough. Chill the dough for 20 minutes.
- Press dough evenly into a greased 12-inch pizza pan. Bake for 17–19 minutes or until lightly golden. Let the crust cool completely.
- Prepare the Frosting: In a large bowl, beat cream cheese and butter until smooth. Add confectioners’ sugar and vanilla extract. Beat until light and creamy.
- Assemble the Pizza: Spread frosting evenly over the cooled crust. Arrange sliced fruit in a creative pattern. Serve immediately or refrigerate for up to 3 days.

- The cookie crust can be made a day in advance and stored covered at room temperature.
