Ingredients
- 4 large bell peppers (red, yellow, or green)
- 1 pound ground beef
- 1 cup chopped onions
- 1 cup diced tomatoes
- 1 cup chopped zucchini
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, cook ground beef and chopped onions over medium heat until browned.
- Add diced tomatoes, chopped zucchini, garlic powder, Italian seasoning, salt, and pepper. Cook for 5 minutes.
- Fill each bell pepper with the beef mixture and pack it in well.
- Place stuffed peppers in a baking dish and cover with foil. Bake for 25 minutes.
- Remove foil, sprinkle shredded cheese on top, and bake for an additional 10 minutes until cheese is melted.
- Let cool slightly before serving.
Notes
Opt for lean ground beef for a lighter dish. You can pre-cook the peppers in boiling water for 2 minutes for added tenderness.
