Description

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the beef cubes in batches, then set aside.
  2. In the same pot, add onions and garlic, cooking until softened.
  3. Stir in tomato paste, then add the beef back to the pot.
  4. Pour in the beef broth and add the carrots, potatoes, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 90 to 120 minutes, or until the beef is tender.
  7. Remove the bay leaf before serving.
