Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium-high heat. Brown the beef cubes in batches, then set aside.
- In the same pot, add onions and garlic, cooking until softened.
- Stir in tomato paste, then add the beef back to the pot.
- Pour in the beef broth and add the carrots, potatoes, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 90 to 120 minutes, or until the beef is tender.
- Remove the bay leaf before serving.
