A comforting beef stew made with tender beef, fresh vegetables, and a rich broth, perfect for cold days.
Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Brown the beef cubes on all sides.
- Remove the beef and set it aside. In the same pot, add the onion and garlic, cooking until softened.
- Stir in the tomato paste, then return the beef to the pot.
- Add the beef broth, carrots, potatoes, thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer for 90 to 120 minutes, until the beef is tender.
- Remove the bay leaf before serving.
Notes
For extra flavor, consider marinating the beef in red wine for a few hours before cooking. Feel free to add other vegetables, like peas or celery, for more variety.
