Description

A comforting beef stew made with tender beef, fresh vegetables, and a rich broth, perfect for cold days.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil


Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Brown the beef cubes on all sides.
  2. Remove the beef and set it aside. In the same pot, add the onion and garlic, cooking until softened.
  3. Stir in the tomato paste, then return the beef to the pot.
  4. Add the beef broth, carrots, potatoes, thyme, bay leaf, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 90 to 120 minutes, until the beef is tender.
  6. Remove the bay leaf before serving.

Notes

For extra flavor, consider marinating the beef in red wine for a few hours before cooking. Feel free to add other vegetables, like peas or celery, for more variety.
