Description

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add onion and garlic, cooking until softened.
  3. Stir in black beans, corn, diced tomatoes, enchilada sauce, cumin, chili powder, salt, and pepper.
  4. Simmer for 10 minutes to blend flavors.
  5. Top with shredded cheese and cover until melted.
