Ingredients
- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add onion and garlic, cooking until softened.
- Stir in black beans, corn, diced tomatoes, enchilada sauce, cumin, chili powder, salt, and pepper.
- Simmer for 10 minutes to blend flavors.
- Top with shredded cheese and cover until melted.
