Description
A hearty dish of tender beef infused with the rich flavors of dried chiles, perfect for tacos, rice, or fresh tortillas.
Ingredients
- 2 lb beef chuck, cut into cubes
- 6-8 dried chiles (such as guajillo or ancho)
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tsp ground cumin
- 1 tsp dried oregano
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Soak the dried chiles in hot water for about 20 minutes.
- Remove the stems and seeds from the chiles.
- Blend the chiles with minced garlic and some soaking water until smooth.
- Heat vegetable oil in a large pot and brown the beef cubes on all sides.
- Add the chopped onion and cook until soft and translucent, about 5-7 minutes.
- Pour in the blended chile sauce, beef broth, cumin, and oregano. Stir to combine.
- Reduce heat to low and let simmer for 2 hours.
- Season with salt and pepper to taste before serving.
Notes
For a milder flavor, reduce the number of chiles or use sweet varieties. Serve with warm tortillas or over rice.
