Description

A hearty dish of tender beef infused with the rich flavors of dried chiles, perfect for tacos, rice, or fresh tortillas.


Ingredients

  • 2 lb beef chuck, cut into cubes
  • 6-8 dried chiles (such as guajillo or ancho)
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tbsp vegetable oil
  • Salt and pepper to taste


Instructions

  1. Soak the dried chiles in hot water for about 20 minutes.
  2. Remove the stems and seeds from the chiles.
  3. Blend the chiles with minced garlic and some soaking water until smooth.
  4. Heat vegetable oil in a large pot and brown the beef cubes on all sides.
  5. Add the chopped onion and cook until soft and translucent, about 5-7 minutes.
  6. Pour in the blended chile sauce, beef broth, cumin, and oregano. Stir to combine.
  7. Reduce heat to low and let simmer for 2 hours.
  8. Season with salt and pepper to taste before serving.

Notes

For a milder flavor, reduce the number of chiles or use sweet varieties. Serve with warm tortillas or over rice.
