Description
Crunchy, cheesy, and meaty goodness wrapped in a tortilla and fried until golden and crunchy.
Ingredients
- 1 pound ground beef
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 onion (diced small)
- 2 cloves garlic (minced)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- Oil for frying
- Sour cream and salsa for serving (optional)
Instructions
- In a skillet, cook the ground beef over medium heat. Add the onion and garlic and cook until the meat is browned and the onion is soft. Season with chili powder, cumin, salt, and pepper.
- Remove from heat and stir in the shredded cheese until melted. Mix quickly so everything gets cozy together.
- Place a generous amount of the beef and cheese mixture in the center of each tortilla. Fold the sides in and roll up tightly. Seal by tucking the ends under.
- Heat oil in a deep pan over medium-high heat. Fry the chimichangas until golden brown and crispy, about 3-4 minutes on each side.
- Drain on paper towels and serve with sour cream and salsa if desired. Eat immediately for max crunch.
Notes
Make ahead and freeze before frying. Warm tortillas to prevent cracking while rolling.
