Description

Quick and easy cheesy bean enchiladas perfect for a comforting meal.


Ingredients

  • 8 corn tortillas
  • 2 cups black beans, cooked
  • 1 cup shredded cheese
  • 1 cup enchilada sauce
  • 1/2 cup diced onions
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • Salt to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a pan over medium heat and sauté the onions until translucent.
  3. Add the black beans and ground cumin to the pan, stirring until heated through.
  4. Fill each tortilla with the bean mixture, adding cheese, then roll them up and place seam-side down in a baking dish.
  5. Pour the enchilada sauce over the rolled tortillas, covering them well.
  6. Sprinkle the remaining cheese on top.
  7. Bake for 20 minutes until the cheese is melted and bubbly.
