Ingredients
- 2 cups cooked black beans
- 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- 8 corn tortillas
- 2 cups enchilada sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 cup chopped onion
- 1/4 cup chopped cilantro
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine black beans, cheese, cumin, chili powder, onion, and cilantro.
- Warm the tortillas briefly to make them pliable.
- Spoon the bean mixture into each tortilla and roll them up burrito-style.
- Place rolled tortillas seam side down in a baking dish.
- Pour enchilada sauce generously over the rolled tortillas.
- Bake for 20 minutes until heated through and cheese is melted.
- Serve hot with extra cheese or cilantro if desired.
