Ingredients
- 1-2 lbs. fresh salmon
- 2 tablespoons brown sugar
- 2 teaspoons smoked paprika
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon kosher salt
- 2 tablespoons olive oil
- 2 mangoes, diced
- 1 avocado, diced
- 1/4 cup minced cilantro
- 1/4 cup minced red onion
- 1/2 jalapeño, minced (optional)
- 1 teaspoon honey
- 2 tablespoons lime juice + 1 teaspoon lime zest
- Salt to taste
- 1 1/2 cups of rice
Instructions
- Toss all ingredients for the mango avocado salsa in a bowl to combine. Taste and adjust as needed.
- Cook the rice according to package directions.
- Preheat the oven to 475 degrees. Line a baking sheet with foil.
- Mix the brown sugar, spices, and olive oil to create a paste. Place the salmon skin side down on the baking sheet and rub the paste generously on top.
- Bake for 6-12 minutes based on the salmon thickness and your preferred doneness.
- To serve, pile the cooked rice on a plate, add pieces of salmon, and top with the mango avocado salsa. Squeeze lime juice on top for extra flavor.
Notes
Make sure the salmon is skinless for easier serving. Feel free to adjust the spice level with jalapeño. For a quicker option, grill the salmon instead of baking.
