Description

A delightful dish combining rich salmon flavors with crunchy panko breadcrumbs and a creamy Bang Bang sauce for a sweet and spicy kick.


Ingredients

  • 1 lb fresh salmon (skinless, cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish


Instructions

  1. Preheat your oven to 400°F (200°C) or your air fryer according to the manufacturer’s instructions.
  2. In a bowl, mix the garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in the seasoning until well coated.
  3. Place the panko breadcrumbs on a plate. Dip each seasoned salmon cube into the breadcrumbs, making sure they are evenly coated. Drizzle with olive oil or use a spray for crisping.
  4. Place the coated salmon bites on a baking sheet or in the air fryer basket. Bake for about 12-15 minutes or air-fry for about 10 minutes, until golden and cooked through.
  5. In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice until smooth. Adjust spiciness by adding more sriracha if desired.
  6. In serving bowls, add a layer of cooked jasmine rice or cauliflower rice. Top with shredded purple cabbage, sliced avocado, shredded carrots, and the salmon bites. Drizzle with the Bang Bang sauce and garnish with green onions, fresh cilantro, and sesame seeds.

Notes

Ensure the salmon is cut into uniform pieces for even cooking. Use air fryer for extra crispy texture and adjust spiciness of sauce as desired.
