Description

For the Chicken:

  • 2 chicken breasts (cut into bite-sized pieces)
  • ½ cup cornstarch or panko breadcrumbs
  • Salt & pepper (to taste)
  • Cooking spray or a drizzle of oil

For the Bowl:

  • 2 cups cooked white or brown rice (or cauliflower rice)
  • 1 cup shredded red cabbage
  • ½ cup julienned carrots
  • ½ cup sliced cucumbers
  • ½ cup cooked edamame
  • 2 green onions, chopped
  • Sesame seeds and cilantro (optional garnish)

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 12 teaspoons sriracha (to taste)
  • 1 teaspoon honey or maple syrup

Instructions

  1. Prepare the Chicken: Preheat oven to 400°F (or air fryer to 375°F). Toss chicken in cornstarch or panko with salt and pepper. Spread on baking sheet or in air fryer basket. Spray lightly with oil and bake/air fry for 15–20 minutes until golden and crispy.
  2. Cook the Rice: Prepare rice using your preferred method. Set aside.
  3. Make the Bang Bang Sauce: In a bowl, whisk together mayo, sweet chili sauce, sriracha, and honey. Adjust heat or sweetness to taste.
  4. Assemble the Bowl: In each serving bowl, layer rice, shredded cabbage, carrots, cucumbers, edamame, and crispy chicken. Drizzle generously with Bang Bang sauce.
  5. Garnish and Serve: Top with green onions, sesame seeds, and cilantro if using. Serve immediately or store in containers for meal prep.

Notes

Use cauliflower rice for a low-carb version. The chicken can also be pan-fried if preferred. For extra crunch, double-coat the chicken with egg and panko.
