Ingredients
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup maple syrup (optional)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup milk (or dairy-free alternative)
- 1 large egg
- 1/2 cup chocolate chips or blueberries (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, combine mashed bananas, oats, maple syrup, baking powder, baking soda, cinnamon, and salt.
- Stir in milk and egg until just combined.
- If using, fold in chocolate chips or blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
For best results, use very ripe bananas. Don’t overmix the batter for fluffier muffins.
