Description

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup maple syrup (optional)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk (or dairy-free alternative)
  • 1 large egg
  • 1/2 cup chocolate chips or blueberries (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine mashed bananas, oats, maple syrup, baking powder, baking soda, cinnamon, and salt.
  3. Stir in milk and egg until just combined.
  4. If using, fold in chocolate chips or blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

For best results, use very ripe bananas. Don’t overmix the batter for fluffier muffins.
