Ingredients
- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1/4 cup cream cheese
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the bananas in a bowl.
- Add the rolled oats, flour, brown sugar, baking soda, cinnamon, and salt. Mix well.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes until golden brown.
- Let cookies cool completely.
- In another bowl, beat the softened butter, powdered sugar, cream cheese, and vanilla until smooth.
- Spread the filling on half of the cookies and top with the remaining cookies to form sandwiches.
