Description

Delightful treats combining the natural sweetness of ripe bananas with hearty oats, sandwiched around a luscious cream cheese filling.


Ingredients

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas until smooth.
  3. Mix rolled oats, flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt until combined.
  4. Beat in the softened butter and vanilla extract until creamy.
  5. Drop spoonfuls of the mixture onto a lined baking sheet.
  6. Bake for 10 to 12 minutes or until golden brown.
  7. Once cooled, spread cream cheese filling between two cookies to create sandwiches.

Notes

Refrigerate leftovers in an airtight container for 3–4 days. They can be frozen for up to 2 months.
