Ingredients

  • 1/4 cup chia seeds
  • 1 1/4 cup light coconut milk (or any milk)
  • 1-2 tbsp maple syrup (honey or agave syrup)
  • 1 tsp vanilla extract
  • 1 banana, chopped or mashed
  • 1/2 tsp cinnamon (optional)


Instructions

  1. Finely chop or mash the banana.
  2. In a bowl, combine the banana, chia seeds, cinnamon (if using), milk, maple syrup, and vanilla extract.
  3. Whisk until well combined.
  4. Let it sit for 5-10 minutes, then whisk again to prevent clumping.
  5. Cover and refrigerate for at least 2 hours or overnight.
  6. Serve as is or top with additional banana, coconut flakes, or your favorite toppings.

Notes

Use ripe bananas for better sweetness and flavor. For a creamier texture, blend the mixture instead of whisking. Store in an airtight container for 3-5 days.
