A healthy and delightful banana chia pudding that is simple to make and packed with nutrients.
Ingredients
- 1/4 cup chia seeds
- 1 1/4 cup light coconut milk (or any milk)
- 1-2 tbsp maple syrup (honey or agave syrup)
- 1 tsp vanilla extract
- 1 banana, chopped or mashed
- 1/2 tsp cinnamon (optional)
Instructions
- Finely chop or mash the banana.
- In a bowl, combine the banana, chia seeds, cinnamon (if using), milk, maple syrup, and vanilla extract.
- Whisk until well combined.
- Let it sit for 5-10 minutes, then whisk again to prevent clumping.
- Cover and refrigerate for at least 2 hours or overnight.
- Serve as is or top with additional banana, coconut flakes, or your favorite toppings.
Notes
Use ripe bananas for better sweetness and flavor. For a creamier texture, blend the mixture instead of whisking. Store in an airtight container for 3-5 days.
