Ingredients

  • 3 to 4 ripe bananas, mashed
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat the oven to 350°F and prepare a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a large mixing bowl.
  3. Add melted butter to the mashed bananas and mix until smooth.
  4. Incorporate sugar, then add eggs one at a time and stir in vanilla.
  5. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually mix the dry ingredients into the banana mixture until just combined.
  7. Fold in nuts if using.
  8. Pour the batter into the prepared loaf pan and tap gently to remove air bubbles.
  9. Bake for 55 to 65 minutes, or until a toothpick comes out clean.

Notes

For extra moistness, add a tablespoon of yogurt or sour cream. Store wrapped at room temperature for up to 3 days, or in the fridge for a week.
