A colorful and flavorful mix of roasted vegetables with balsamic vinegar, perfect for an easy side dish or healthy snack.
Ingredients
- 2 cups bell peppers, chopped
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes
- 1 cup red onion, chopped
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine all the vegetables.
- Drizzle with olive oil and balsamic vinegar.
- Add garlic powder, salt, and pepper.
- Toss until vegetables are well coated.
- Spread vegetables on a baking sheet.
- Roast for 25-30 minutes, stirring halfway.
- Remove and serve warm.
Notes
Feel free to swap out vegetables for whatever you have on hand. Works great with mushrooms, asparagus, or eggplant.
