Description

Ingredients

  • 4 cod fillets
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix breadcrumbs, Parmesan cheese, parsley, dill, lemon zest, olive oil, salt, and pepper until well combined.
  3. Place cod fillets on a baking sheet lined with parchment paper or lightly greased.
  4. Squeeze lemon juice over the fillets, ensuring they are coated.
  5. Spread the breadcrumb mixture evenly over the top of the cod fillets.
  6. Bake for about 15-20 minutes or until the fish flakes easily with a fork.
  7. Serve hot with lemon wedges on the side.
