Ingredients
- 4 cod fillets
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix breadcrumbs, Parmesan cheese, parsley, dill, lemon zest, olive oil, salt, and pepper until well combined.
- Place cod fillets on a baking sheet lined with parchment paper or lightly greased.
- Squeeze lemon juice over the fillets, ensuring they are coated.
- Spread the breadcrumb mixture evenly over the top of the cod fillets.
- Bake for about 15-20 minutes or until the fish flakes easily with a fork.
- Serve hot with lemon wedges on the side.
