Description

A healthier version of a classic favorite, Baked Chicken Parmesan combines juicy chicken with savory flavors for a satisfying dish.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil or cooking spray for baking


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix breadcrumbs and Parmesan cheese together.
  3. In another bowl, whisk the eggs and season with salt and pepper.
  4. Dip each chicken breast into the egg mixture, then coat with the breadcrumb mixture, ensuring it’s fully covered.
  5. Place breaded chicken on a baking sheet lined with parchment paper and drizzle with olive oil or spray with cooking spray.
  6. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
  7. Remove from the oven and spoon marinara sauce over each chicken breast.
  8. Top with mozzarella cheese and return to the oven until the cheese is melted and bubbly, about 5-10 minutes.

Notes

For a healthier twist, substitute chicken with eggplant or add spinach. Ensure even cooking by pounding the chicken to an even thickness.
