A healthier version of a classic favorite, Baked Chicken Parmesan combines juicy chicken with savory flavors for a satisfying dish.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 2 eggs
- Salt and pepper to taste
- Olive oil or cooking spray for baking
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix breadcrumbs and Parmesan cheese together.
- In another bowl, whisk the eggs and season with salt and pepper.
- Dip each chicken breast into the egg mixture, then coat with the breadcrumb mixture, ensuring it’s fully covered.
- Place breaded chicken on a baking sheet lined with parchment paper and drizzle with olive oil or spray with cooking spray.
- Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
- Remove from the oven and spoon marinara sauce over each chicken breast.
- Top with mozzarella cheese and return to the oven until the cheese is melted and bubbly, about 5-10 minutes.
- Serve hot with pasta or a side salad.
Notes
For a healthier twist, substitute chicken with eggplant or add spinach. Ensure even cooking by pounding the chicken to an even thickness.
