Ingredients
- 1 large head of cabbage
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried herbs (thyme, oregano, or rosemary)

Instructions
- Preheat your oven to 425°F (220°C).
- Slice the cabbage into 1-inch thick steaks.
- In a small bowl, combine olive oil, minced garlic, dried herbs, salt, and pepper.
- Brush both sides of the cabbage steaks with the oil and herb mixture.
- Line a baking sheet with parchment paper and arrange the cabbage steaks without overcrowding.
- Roast in the oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Serve hot as a side or a main dish.
