- ¼ tsp dried thyme
- ½–1 tsp red chili flakes (optional)
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese (medium or sharp)
Instructions
- Heat butter or olive oil in a large pot over medium heat. Add onion and carrots, and sauté until tender, about 5–7 minutes.
- Stir in garlic and thyme, and cook for an additional minute. Pour in chicken broth, and season with salt, pepper, and optional chili flakes. Bring to a gentle simmer.
- Add gnocchi and cook until tender, about 3–4 minutes. Reduce heat to low, and stir in heavy cream or half-and-half slowly to ensure the soup does not boil.
- Gradually add cheddar cheese, stirring continuously until melted and the soup is thickened and creamy.
- Fold in cooked and chopped bacon. Adjust seasoning if needed, and serve with extra cheddar cheese or freshly ground black pepper on top.
