Description
A comforting pasta dish featuring savory bacon, roasted Brussels sprouts, and sweet butternut squash.
Ingredients
- 8 ounces pasta
- 4 strips bacon, chopped
- 1 cup Brussels sprouts, halved
- 1 cup butternut squash, cubed
- 1/2 cup parmesan cheese, grated
- Juice of 1 lemon
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Toss Brussels sprouts and butternut squash with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
- Cook the pasta according to package instructions.
- In a skillet, cook the chopped bacon over medium heat until crispy.
- Drain the pasta and add it to the skillet with the bacon, roasted vegetables, parmesan cheese, and lemon juice.
- Toss everything together until well combined, and serve hot.
Notes
Serve with extra parmesan and lemon juice, and pair with a side salad or garlic bread.
