Description

A comforting pasta dish featuring savory bacon, roasted Brussels sprouts, and sweet butternut squash.


Ingredients

  • 8 ounces pasta
  • 4 strips bacon, chopped
  • 1 cup Brussels sprouts, halved
  • 1 cup butternut squash, cubed
  • 1/2 cup parmesan cheese, grated
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss Brussels sprouts and butternut squash with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
  3. Cook the pasta according to package instructions.
  4. In a skillet, cook the chopped bacon over medium heat until crispy.
  5. Drain the pasta and add it to the skillet with the bacon, roasted vegetables, parmesan cheese, and lemon juice.
  6. Toss everything together until well combined, and serve hot.

Notes

Serve with extra parmesan and lemon juice, and pair with a side salad or garlic bread.
