Ingredients
- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Cut the avocados in half, remove the pit, and scoop the flesh into a chilled mixing bowl.
- Add the cherry tomatoes, cucumber, and red onion to the bowl.
- Sprinkle with cilantro and lime juice.
- Season with salt and pepper.
- Toss gently to combine all ingredients.
Notes
Best eaten fresh but can be refrigerated in an airtight container for 2-3 days. Keep the avocado separate until ready to serve to prevent browning.
