A delicious blend of creamy avocado and rich eggs on crisp bread, perfect for breakfast or a snack.
Ingredients
- 1 ripe avocado
- 2 eggs
- 2 slices of bread
- Salt and pepper to taste
- Hot sauce (optional)
- Scallions, chopped (for garnish)
Instructions
- Toast the slices of bread to your liking.
- While the bread is toasting, bring a small pot of water to a simmer and add the eggs. Cook for about 6-7 minutes for soft-boiled eggs.
- Scoop the avocado into a bowl, season with salt and pepper, and mash it with a fork.
- Once the eggs are cooked, remove them from the pot and place them in cold water to stop the cooking process. Peel the eggs and set aside.
- Spread the mashed avocado evenly on the toasted bread.
- Slice the eggs in half and place them on top of the avocado toast.
- Drizzle with hot sauce if desired and sprinkle with chopped scallions. Serve immediately.
Notes
Best served warm. Can add toppings like sliced tomatoes or feta cheese.
