A modern twist on a classic dish, these avocado deviled eggs combine creamy avocados with traditional flavors for a delightful appetizer.
Ingredients
- 12 large eggs
- 2 ripe avocados
- 3 tablespoons fresh lime juice
- 2 minced cloves of garlic
- 1/2 deseeded minced jalapeño
- 1/2 teaspoon cayenne pepper
- 1 teaspoon kosher salt
- 1/4 cup finely chopped fresh cilantro
Instructions
- Hard boil the eggs by placing them in a saucepan, covering with water, bringing to a boil, then covering and letting them sit for 18 minutes.
- Cool the eggs in an ice water bath for a few minutes before peeling.
- Cut eggs in half and place yolks in a food processor.
- Add avocados, lime juice, garlic, jalapeño, cayenne, and salt to the processor, then blend until smooth.
- Add cilantro and pulse to combine, adjusting seasonings as needed.
- Fill egg whites with the avocado mixture and garnish with cilantro and cayenne.
Notes
For best flavor, serve immediately. You can prepare the filling in advance, but wait to fill the eggs until right before serving.
