Description

A heartwarming dish that combines Italian sausage with roasted butternut squash, pasta, and spinach, capturing the essence of autumn.


Ingredients

  • 1 medium butternut squash
  • 8 oz pasta (penne or fusilli)
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb Italian sausage
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh herbs (sage or thyme) for garnish


Instructions

  1. Preheat your oven to 400°F (200°C). Cut the butternut squash in half, remove the seeds, and roast cut-side down on a baking sheet for 25-30 minutes until tender.
  2. Boil salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until soft and aromatic.
  4. Add crumbled Italian sausage and cook until browned.
  5. Stir in fresh spinach until wilted, and mix in the cooked pasta, adjusting seasoning with salt and pepper.
  6. Once the squash is roasted, scoop out the flesh and add it to the skillet. Stir until everything is well combined.
  7. Plate the mixture and top with grated Parmesan cheese and fresh herbs before serving.

Notes

For added flavor, choose between spicy or sweet Italian sausage. Fresh herbs enhance the dish significantly.
