Ingredients
- 4 Yukon gold potatoes
- 1 white or yellow onion
- 3 tablespoons butter
- 3 tablespoons all-purpose flour (or gluten-free 1:1 flour)
- 2 cups unsweetened almond milk (or regular milk)
- 1 ½ cups cheddar cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 cup Gruyere cheese, shredded
- ½ cup Parmesan cheese, grated
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Thinly slice the Yukon gold potatoes and onion.
- In a saucepan, melt butter and stir in the flour to create a roux.
- Gradually whisk in the almond milk until smooth.
- Stir in the garlic powder, salt, black pepper, and cheddar cheese until melted and well combined.
- Layer half the potatoes, half the onion, and half the cheese sauce in a baking dish.
- Repeat layering with the remaining potatoes, onion, and cheese sauce.
- Top with extra cheese if desired and bake for about 1 hour or until the potatoes are tender and the top is golden brown.
- Garnish with chopped parsley before serving.
Notes
For extra flavor, try adding herbs like thyme or rosemary to the cheese sauce. Use a mandoline slicer for evenly thin potato slices. For a crispy top, broil the dish for a few minutes after baking.
