Ingredients

  • 4 Yukon gold potatoes
  • 1 white or yellow onion
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour (or gluten-free 1:1 flour)
  • 2 cups unsweetened almond milk (or regular milk)
  • 1 ½ cups cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup Gruyere cheese, shredded
  • ½ cup Parmesan cheese, grated
  • Fresh parsley, chopped for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Thinly slice the Yukon gold potatoes and onion.
  3. In a saucepan, melt butter and stir in the flour to create a roux.
  4. Gradually whisk in the almond milk until smooth.
  5. Stir in the garlic powder, salt, black pepper, and cheddar cheese until melted and well combined.
  6. Layer half the potatoes, half the onion, and half the cheese sauce in a baking dish.
  7. Repeat layering with the remaining potatoes, onion, and cheese sauce.
  8. Top with extra cheese if desired and bake for about 1 hour or until the potatoes are tender and the top is golden brown.
  9. Garnish with chopped parsley before serving.

Notes

For extra flavor, try adding herbs like thyme or rosemary to the cheese sauce. Use a mandoline slicer for evenly thin potato slices. For a crispy top, broil the dish for a few minutes after baking.
