Description

A bright, crunchy, and addictive salad that combines edamame, cucumbers, carrots, and a delicious sesame dressing. Perfect as a snack, side, or light meal.


Ingredients

  • 2 cups shelled edamame
  • 1 cup diced cucumbers
  • 1 cup shredded carrots
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup cilantro
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame seeds


Instructions

  1. Boil edamame for 5 minutes, then drain and cool.
  2. In a large bowl, combine edamame, cucumbers, carrots, bell pepper, green onions, and cilantro.
  3. In a separate bowl, whisk together soy sauce, sesame oil, rice vinegar, and ginger.
  4. Pour the dressing over the salad and toss to combine.
  5. Sprinkle with sesame seeds before serving.

Notes

Store in an airtight container for up to four days. Dress just before serving to keep the salad crisp.
