A delightful cake combining the sweetness of apples with warm spices, perfect for any occasion.
Ingredients
- 2 1/4 cups all-purpose flour, spooned and leveled
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1/8 tsp ground cloves
- 2/3 cup vegetable oil
- 2 large eggs, room temperature
- 3/4 cup brown sugar, packed
- 3/4 cup granulated sugar
- 1/2 cup sour cream, room temperature
- 1 tsp pure vanilla extract
- 2-3 large honey crisp apples, grated (~1 1/2 cups)
- 1/4 cup salted butter
- 1/2 cup dark brown sugar, packed
- 2 tbsp heavy cream
- 1/2 tsp pure vanilla extract
- 1 cup powdered sugar, sifted
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×9-inch nonstick pan with parchment paper.
- In a large mixing bowl, whisk together the dry ingredients.
- In another bowl, whisk together the wet ingredients.
- Pour the wet ingredients into the dry ingredients and fold until combined.
- Fold in the grated apples.
- Pour the batter into the prepared pan.
- Bake for 35-40 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- For icing, melt butter, brown sugar, and heavy cream in a saucepan. Whisk until combined and boils gently.
- Remove from heat, whisk in vanilla and powdered sugar. Pour icing on warm cake.
- Slice and enjoy warm!
Notes
Serve with vanilla ice cream or whipped cream for extra indulgence. Best enjoyed with a cup of tea or coffee.
