Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup peeled and diced apples
- Oil for frying
- Powdered sugar for dusting
Instructions
- In a bowl, whisk together flour, baking powder, salt, cinnamon, and sugar.
- In another bowl, mix together eggs, milk, and vanilla extract until well combined.
- Gradually combine the wet and dry ingredients until smooth, then gently fold in the diced apples.
- Heat oil in a deep pan over medium heat.
- Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan. Fry until golden brown, about 2-3 minutes per side.
- Remove the fritter bites and drain them on paper towels. Dust with powdered sugar before serving.

Store in an airtight container for up to 3-4 days, or freeze for longer storage.
