Description

A delightful dessert featuring the sweetness of apples and a buttery crumb topping, enhanced with cinnamon and maple glaze.

Ingredients

  • 4 small or 3 large red gala apples (diced)
  • 1 1/2 tbsp granulated sugar
  • 1 1/2 tsp ground cinnamon
  • 120 g all-purpose flour (for the crumble)
  • 200 g dark brown sugar
  • 1 tsp ground cinnamon (for the crumble)
  • 85 g butter (room temperature, for the crumble)
  • 340 g all-purpose flour (for the cake)
  • ½ tsp ground cinnamon (for the cake)
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt
  • 125 g butter (room temperature, for the cake)
  • 225 g granulated sugar
  • 3 eggs (room temperature)
  • 225 g sour cream (14-18%, room temperature)
  • 40 g vegetable oil (e.g., canola oil)
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar (for the glaze)
  • 1 tbsp maple syrup (for the glaze)
  • 1 tsp sour cream (for the glaze)
  • 1/2 tsp vanilla extract (for the glaze)
  • 1-2 tsp water (for the glaze)

Instructions

  1. In a bowl, mix diced apples with granulated sugar and ground cinnamon. Set aside.
  2. In another bowl, blend all-purpose flour, dark brown sugar, and ground cinnamon for the crumble. Add butter and mix until crumbly. Set aside.
  3. Preheat the oven to 350°F (175°C). In a large bowl, mix all-purpose flour, ground cinnamon, baking powder, and salt together. In a separate bowl, beat room temperature butter, granulated sugar, and eggs until fluffy. Add sour cream, vegetable oil, and vanilla extract. Combine wet and dry ingredients until smooth.
  4. Pour half of the cake batter into a greased baking pan. Layer cinnamon apples evenly on top, then add remaining batter. Sprinkle the crumble mixture over the cake.
  5. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  6. In a small bowl, mix powdered sugar, maple syrup, sour cream, vanilla extract, and enough water to achieve a drizzleable consistency for the glaze.
  7. Allow the cake to cool before drizzling the maple glaze over the top before serving.

Notes

Best served warm or at room temperature. Pairs nicely with vanilla ice cream or coffee.
