Description

Delicious and healthy muffins made with Greek yogurt and applesauce, perfect for breakfast or snacks.


Ingredients

  • 1 cup Greek yogurt
  • 1 cup applesauce
  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup diced apples


Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a mixing bowl, combine Greek yogurt, applesauce, and eggs. Mix well.
  3. In another bowl, whisk together whole wheat flour, brown sugar, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture. Stir until just combined, being careful not to overmix.
  5. Fold in the diced apples.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins can be served warm or at room temperature. They can be enhanced with honey for additional sweetness.
