Description
Delicious and healthy muffins made with Greek yogurt and applesauce, perfect for breakfast or snacks.
Ingredients
- 1 cup Greek yogurt
- 1 cup applesauce
- 2 eggs
- 1 1/2 cups whole wheat flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup diced apples
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a mixing bowl, combine Greek yogurt, applesauce, and eggs. Mix well.
- In another bowl, whisk together whole wheat flour, brown sugar, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined, being careful not to overmix.
- Fold in the diced apples.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
These muffins can be served warm or at room temperature. They can be enhanced with honey for additional sweetness.
